Instructions
Prepare Rice (option 1 – soaking method):
- 1 Rinse basmati rice until water runs clear
- 2 Soak in water for 20 minutes
- 3 Drain well
Prepare Vegetables:
- 4 Cut all vegetables to uniform sizes for even cooking
- 5 Cut potatoes into small cubes (¾ inch)
- 6 Keep cauliflower florets small
- 7 Have everything ready (mise en place)
Honey-Yogurt Marinade:
- 8 Mix yogurt with all ingredients
- 9 Set aside
Cook Biryani:
- 10 In heavy-bottomed pot with tight-fitting lid, heat 1 tablespoon ghee
- 11 Add cumin seeds, let splutter
- 12 Add sliced onions, cook until light golden (5-6 minutes)
- 13 Remove onions, set aside for garnish
- 14 In same pot, add remaining 1 tablespoon ghee
- 15 Add ginger and green chili, cook 30 seconds
- 16 Add potatoes and cauliflower, cook 3-4 minutes stirring
- 17 Add remaining vegetables (carrot, peas, green beans)
- 18 Pour honey-yogurt marinade over vegetables
- 19 Mix well, cook 3-4 minutes on medium-high heat
- 20 Add soaked and drained rice
- 21 Gently mix rice with vegetables (don’t break rice grains)
- 22 Add water and whole spices (bay leaves, cardamom, cinnamon, peppercorns, cloves)
- 23 Stir once, bring to boil over high heat
- 24 Once boiling, reduce heat to low
- 25 Cover pot tightly with foil first, then lid (for steam retention)
- 26 Cook for 25-30 minutes without opening lid
- 27 Listen for slight sizzling sound near edges (indicates rice is cooked)
- 28 Turn off heat, let rest covered for 5 minutes
- 29 Open lid carefully (steam will escape)
Garnish and Serve:
- 30 Gently fluff rice with fork
- 31 Add fresh cilantro and mint
- 32 Top with reserved fried onions
- 33 Garnish with cashews and raisins
- 34 Serve hot
