Ingredients
- • Rolled oats: 80g (¾ cup)
- • Almond butter (unsweetened): 3 tablespoons
- • Peanut butter (unsweetened): 2 tablespoons
- • AlimentIndia Ginger Infused Honey: 3 tablespoons
- • Coconut oil: 1 tablespoon
- • Almonds (chopped): 40g
- • Walnuts (chopped): 30g
- • Dates (pitted, chopped): 30g
- • Sunflower seeds: 15g
- • Pumpkin seeds: 15g
- • Vanilla extract: ¼ teaspoon
- • Rock salt: pinch
- • Cinnamon powder: ¼ teaspoon
- • Coating options: unsweetened coconut powder OR cacao powder
Instructions
- 1 Add rolled oats to food processor, pulse until mixture resembles coarse flour
- 2 Transfer to bowl
- 3 Add almond butter, peanut butter, honey, coconut oil
- 4 Mix well with hands until combined
- 5 Add chopped almonds, walnuts, dates, seeds
- 6 Add vanilla, salt, cinnamon
- 7 Mix thoroughly until well combined
- 8 Refrigerate mixture for 30 minutes
- 9 Take tablespoon of mixture, roll between palms into 1-inch ball
- 10 Roll in coconut powder or cacao powder for coating
- 11 Place on parchment paper
- 12 Refrigerate in airtight container until serving
- 13 Can be kept 5-7 days in refrigerator or 2 weeks frozen
